Tres Leches (translation Three Milks) is a perfectly balanced cheese made from Cow, Sheep and just enough Goat’s milk which has been aged for 6 months and who’s natural rind is washed routinely in olive oil to give this cheese an extraordinary depth of flavor. Its’ sharp bite is reminiscent of Manchego but it has a pleasant, smooth and lactic texture aided by the presence of the cow’s milk. Think of this as a cross between our ever popular Wrångebäck, Manchego and Chebris Chèvre! We think this cheese will please all palates as it is not too strong, not too mild, not too hard, not too soft. Pair with honey and caramelised nuts but also charcuterie or olives.
