Tapping Reeve

Tapping Reeve is named after a notable lawyer, Tapping Reeve, who instituted the Litchfield Law School in the late 18th Century. This cheese was developed in a savory colonial-style to commemorate those times. It is both sharp and refined, with complex richness, in honor of the man himself.
