Betty Koster is an affineur who excels with small production dairies around Holland. She was worked closely with farmers to craft their cheese recipes and then adopts them for her specialised ageing process. One of those cheeses is L’Amuse Brabander, a pearly white goat gouda! Made from the pasteurized milk of Saanen breed goats and hailing from the Brabant region of Holland, it has flavors of caramel and butter with a pleasant savory underpinning from the goat’s milk.
The cheese pairs well with a dry Riesling or a malty amber ale, and Fat Toad Farm Goat Milk Caramel.
