Invented by accident… A loose wheel of cheese ended up falling in to a barrel of red wine at a lively party. Discovered after the fact, the cheese ended up being delicious with its new addition. Now aged for about 72 hours in Doble Pasta Spanish red wine, the rind adds fruity and tannic flavors to the cheese. The paste remains bright white, is mildly fruity with minimal acidity. It has a lovely soft-yet-firm texture. Pairs well with medium-bodied, fruity reds.
