This brie from Fromagerie Rouzaire in Brie, Northern France, ages its wheels for two weeks to perfection before slicing it horizontally in half and filling it with a combination of black summer truffles, crème fraîche, and marscapone, then finally ageing it another two more weeks.
Rouzaire is a family-run dairy which has been producing cheese for three generations, since 1938. Milk is sourced from 25 local farms with mostly Holstein breed cows. The cheesemakers take care of everything by hand, from laying the curds to turning and taking care of the cheeses in the cheese caves.
