With documentation dating back to 1200, but thought to date back to Roman times, Taleggio is an ancient cheese! A traditional, slightly more than semi-soft, washed-rind cheese from Bergamo, Italy. Washed-rind infers the outer part of the cheese has been bathed in a brine. Taleggio gets washed and turned every week during its short ageing process, and creates a thin, edible rind providing a textural difference to its meaty interior. Its not-too-smelly exterior is balanced by creamy, savory, and fruity interior. Perfect with Divina Fig Spread, and a glass of North Italian Soave.
